Recipe for Ice Cream Cake
My friend Sandy makes this for birthdays at work. It’s fantastic! Sort of like a multi-layered ice cream sandwich with cool whip on top and hot fudge in the middle. MMMMMMM!!! I’m on a diet, so of course I had two pieces.
Ice Cream Cake
½ cup fudge topping
8 oz. tub Cool Whip, thawed, divided
1 package Instant Chocolate Pudding mix (4 serving box)
8 Oreos, chopped
12 ice cream sandwiches, unwrapped (of course….haha)
Mix fudge topping and ½ of the Cool Whip together with a wire whisk. Add pudding mix. Stir together until well blended (I used a spatula for this part, not the whisk.). Add chopped Oreos and stir together. Arrange 4 of the ice cream sandwiches side-by-side. Top with ½ of the whipped topping mixture. Repeat layer. Top w/remaining ice cream sandwiches. Frost the top and sides with balance of Cool Whip. Freeze at least 4 hours before serving.
