Two Quick Recipes
CHICKEN POT PIE
1 whole chicken or chicken parts1 can corn, drained1 can peas, drained1 can carrots, drained or 3-4 chopped carrots1 can green beans, drained (optional)2 chicken bouillon cubes1 can cream of chicken soup (optional)2 tbsp. flour1/2 c. waterSalt and pepper to taste2 cans refrigerator biscuits
In a large pot, cover chicken with water and boil about 1 hour or until chicken is done. Take chicken out and remove meat from bone and skin. Add to broth, chicken pieces, corn, peas, carrots, green beans, chicken cubes and soup. Bring to boil.
Thicken with flour mixed with water if needed. Season to taste. While boiling hot, pour into a shallow baking pan and top with biscuits (I put cold pieces of butter all over the top to make it a golden brown! So pretty). Bake at 350 degrees until biscuits are browned and done.
QUICK & EASY CHICKEN & DUMPLINGS
2 cans Swanson chicken broth
2 cans Swanson chicken
2 cans biscuits (10 count each) (I buy the butter kind)
Bring chicken to boil in broth with salt and pepper. Roll out biscuits on floured board and cut in strips. Drop strips into boiling broth and simmer about 15 minutes, stirring occasionally.
For seasoning, I use a pinch of poultry seasoning, a pinch of Mrs. Dash and salt & pepper! So easy and delicious!
