cookies you can have for breakfast, guilt-free

A few months ago, Dreena Burton talked about her Supercharge Me! cookies on her blog. They’re in her “Eat, Drink and Be Vegan” cookbook, and they sounded right up my alley. They’ve got oats in them, and they have chocolate or carob chips, they’ve got shredded coconut and almond butter, loads of flax meal. And maple syrup for sweetener. Designed to be a healthy energy cookie, they’re very satisfying on top of being really tasty.

They’ve become a regular part of my life. I use them instead of clif bars after my morning (and afternoon) rides. I love them!

I’d love to have similar recipes - healthy, post-workout recovery food types of recipes, in cookie or bar form - to add to the rotation. In the meantime, there is a lot of variation available within the Supercharge Me! recipe.

Dreena had a little story about why she came up with this recipe - after one of her girls’ soccer games, the kids were all given these horribly unhealthy sugary over processed partially-hydrogenated cookies. This delicious healthy cookie recipe is Dreena’s answer to that.

And it makes me laugh, a bit, to know that those same parents who are so blissfully unconcerned with the chemicals and train-wreck of non-nutrition they’re feeding their kids with those cookies (and countless other snacks just like them), these parents are the same ones who probably shake their heads at vegan parents, mumbling something about health.
