Monday Recipes-Healthy Breakfast Ideas

I’ve already told you all about my love of protein pancakes… if you haven’t tried them out, I recommend doing it tomorrow morning! But here are 2 great recipes-healthy breakfast and mid morning snack ideas to get your week off on the right foot.

These recipes are great, easy and quick. You can enjoy them for breakfast or pack them up to have as a post workout morning snack.

Remember though, breakfast is vital so if you don’t use these make sure you are getting something that includes protein, carbs and some fat to help ward off your stomach growling and fantasies about the snack machine.

1. Southern Style Omelet: omelets rock! They’re full of protein to make you feel full and by adding some cheese and veggies you’re getting a great balanced meal. Plus, research shows that women who eat eggs for breakfast are fuller longer and have less sweet cravings.
What you need:

1/2 cup egg substitute or 2 egg whites 1 oz diced tomato 1 oz red onion 1 oz bell pepper 1 slice turkey bacon chopped 1 oz cheddar cheese (or swiss)

What to do:
In a small frying pan, pour in eggs. Heat at MED. Wait until the edges start to firm up and add the rest to just 1/2 of the omelet. Once it starts to set, fold over.  Cook untill cheese is melted and eggs are completely firmed up.

2. Egg and Turkey English Muffin: This taste SOOO good… once again notice that you get your hefty dose of protein, healthy carbs and some good for you fat!
